And despite having no plans for it, you’ve GOT to have it! Suddenly, you’re planning your entire evening around this grocery store chicken!

And then it happens: you’ve got a half-eaten chicken taking up space in your fridge. What are you to do? You can’t throw it out, and you can’t possibly eat it all by yourself.

If this were Autumn (and man, I wish it was), I’d tell you to toss your leftovers into a big, steamy pot of Chicken Soup. You know—the kind your mom makes from scratch when you’re sick or feeling blue, and the taste of it combined with your favorite scented candles, a big knit blanket, and a Harry Potter movie makes everything better? Okay, now I’m really missing Autumn. Let’s get back on track here, people.

This is not fall and NOT your mama’s chicken soup. But this is sort of the summer equivalent! My Rotisserie Chicken Salad makes excellent use of your leftover chicken, is full of bright and refreshing summer flavors, and, unlike some chicken salads you may have had before, actually tastes good. I swear!

Is Rotisserie Chicken Salad Recipe Healthy?

This Rotisserie Chicken Salad is a much healthier variation compared to more traditional recipes. It’s light, fresh, and a little zesty, made with fresh parsley and lemon, crunchy celery and red onion, and, of course, your leftover Rotisserie Chicken. It even uses Greek yogurt for healthy fats and added antioxidants.

I’m telling you, slap this salad between your favorite bread or over your favorite crackers, and you’re in for a treat.

It’s All Greek (Yogurt) To Me

As if this Rotisserie Chicken Salad didn’t already have it all, I’m about to win y’all over tenfold. This amazing, incredible, show-stopping salad has…drumroll, please…NO MAYO. That’s right. For all you mayo haters out there (myself included), you can officially declare this the best chicken salad recipe you’ve ever discovered. At least it’s better than the gross mayo-doused salads you probably grew up with.

Instead, my Rotisserie Chicken Salad ditches the fatty mayonnaise (an unfortunately iconic ingredient in most chicken salads) for a much healthier, tastier option—Greek yogurt. I always love subbing Greek yogurt where it makes sense because it’s so freakin’ good for you AND provides this extra thick, extra creamy texture to the dish.

INGREDIENTS

  • 3 cups rotisserie chicken, shredded
  • 1 cup celery, diced
  • 1/2 cup red onion, finely chopped
  • 3/4 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

INSTRUCTIONS

Combine

Mix chicken, celery, and onion in a bowl.

Dress

Whisk together yogurt, mustard, lemon juice, and seasonings.

Toss

Combine dressing with chicken mixture, add parsley.
