If you’re looking for a quick, simple and tasty protein to top your favorite salad, then I’ve got you covered. This is our go-to recipe for grilled chicken for salads, and it’s become a weekly staple, because it uses pantry ingredients and takes literally under 5 minutes to prep.
The marinade uses 4 simple pantry ingredients, olive oil, salt, pepper and Italian seasoning. That’s it! I almost didn’t post this recipe because it’s so basic and simple, but I decided if we make it all the time, then it’s worth sharing.
Easy Grilled Chicken for Salads

This is our go-to recipe for grilled chicken, and it's become a weekly staple, because it uses pantry ingredients and takes literally under 5 minutes to prep.
Ingredients
2 pounds boneless skinless chicken breasts
Olive oil or avocado oil
Fine Celtic sea salt
Freshly ground pepper
Italian seasoning
Directions
Place chicken breasts on a poultry cutting board, or a plate and rub each breast with some olive or avocado oil, and then liberally season each breast with some Celtic sea salt, freshly ground pepper and Italian seasoning, flip the breasts over and repeat on the other side. When I say liberally, do a bit more than you think would be normal.
Note: If you happen to have chicken breasts that are really large, take a knife and slice the breast in half lengthwise so that the breast is much thinner. This can really help if you have some breasts that are thin and others that are thick. The more consistent the breasts are in size, the better they will cook and be done at the same time.
Preheat the grill tomedium-high heat.
Grill each side of the chicken breast 5-6 minutes per side, until golden and deep grill marks appear, and the internal temp registers 165ºF in the thickest part of the breast.
Note: After you flip the chicken over for the second 5-6min cooking time, do a quick temperature check at the 4-5 min mark. We often find that meats on the grill (or even in the oven), cook faster later in the planned total cooking time. An extra minute of cooking time has a larger impact on the internal temperature than a minute at the beginning. We’ve learned this fact over the past few years when we’ve dried out chicken on the grill because the internal temps got away from us late in the cooking time.
Let chicken rest 5 minutes on a clean cutting board, and then slice crosswise into strips.

This spicy 🌶️ chipotle tahini sauce is SO good. Recipe 👇🏻 I created this sauce for my vegan Mexican quinoa bowl, but it’s truly the perfect sauce for my GF chicken tenders, tacos, burgers, or just as a dip. It takes 5 minutes to whip up and uses 5 simple ingredients, most that you have in your pantry. Ingredients: Directions: Add water 1 tablespoon at a time until you’ve reached the desired consistency. I loved the consistency of the sauce with 2 tablespoons. 1 teaspoon chipotle chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon Celtic sea salt
1-2 tablespoons filtered water
To a small bowl add the tahini, lime juice, chipotle power, smoked paprika, salt and pepper, whisk to combine.
